Ingredients:
- 4 chicken breasts, diced
- Salt and pepper, to taste
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- 1/2 teaspoon saffron threads
- 1/2 cup chicken broth (for blooming saffron)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon Worcestershire sauce
- Fresh parsley, chopped (optional, for garnish)
- Cooked rice, pasta, or toast for serving
Directions:
Bloom the Saffron:
Begin by infusing the saffron. In a small bowl, add the saffron threads to 1/2 cup of warm chicken broth. Let it steep for about 10 minutes. This step is crucial for unlocking the full flavour and aroma of the saffron, creating a beautifully saffron-infused base for the dish.Cook the Chicken:
Season the diced chicken with salt and pepper. In a large skillet, heat the butter and olive oil over medium heat. Add the chicken and cook until it turns golden brown on all sides, about 5-7 minutes. Once cooked, remove the chicken from the skillet and set it aside.Sauté the Vegetables:
