Ingredients:
- 2 cups elbow macaroni
- 1/2 teaspoon saffron threads
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 cup heavy cream
- 1 1/2 cups sharp cheddar\cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- Salt and pepper, to taste
- 1/4 cup grated Parmesan (optional, for topping)
- Fresh parsley, chopped (optional, for garnish)
Directions:
Cook the Pasta
Start by cooking the elbow macaroni according to the package instructions. Bring a large pot of salted water to a boil, then add the macaroni. Cook the pasta until it is al dente, about 8-10 minutes. Once cooked, drain the macaroni in a colander and set it aside.
Bloom the Saffron
In a small bowl, combine the saffron threads with 1/4 cup of warm milk. Let the saffron soak for about 10 minutes. This process, known as blooming, helps release the vibrant color and unique aroma of the saffron, giving your mac and cheese an exquisite golden hue.
Make the Roux
