Ingredients
- 4 teaspoons canola oil
- 2 ounces seitan chorizo crumbles
- 2 pounds boneless, skinless chicken breasts, diced into bite-sized pieces
- 1 green onion, trimmed and minced
- 4 cups cauliflower rice
- 1 cup diced tomatoes
- 1 cup green beans, cut into 1/4-inch pieces
- pinch of saffron
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/2 teaspoons ground pepper
Method
In a large skillet, heat oil on medium high. Cook the seitan chorizo crumbles and chicken until brown, but not cooked through.
Add the garlic and green onions. Sweat for about 2 minutes.
Add the cauliflower rice, saffron (if using), tomatoes and green beans.
Cook for about 10 minutes.
Season with salt and pepper.
